Ode to Chivitos (or, what we ate for 3 days in Uruguay)

O! Chivitos, we adore thee
Specialty of Uruguay
Steak with cheese and ham and an egg
Eat too much and you might die

We first met in Montevideo
Old grill at the mercado
Twice again in old Colonia
Restaurant, then food truck-o


O! Chivitos, how delicious
Greasy goodness every time
Atop French fries or on a roll
Such a yummy way to dine

Pickles, onions, peppers and olives
As you like, make it your own
Best washed down with ice cold Pilsen
Not for weak of corazon
